After a succesful 4 year stint running El Ladrón de Mandarinas (The Mandarine Thief) in Las Palmas de Gran Canaria, Jacobo Llarena has opened El Escaramujo in La Laguna.

He himself describes this new restaurant as serving “Traditional cuisine with a touch of creativity”, and represents a shift in his past cooking style back to more traditional recipes. He always insists on using on the highest quality ingredients, ensuring that every single serving produced has the finest tastes.

With authentic Canarian dishes, mixed in with some of the more local dishes from Spain, and a touch of International flavour, the menu itself is well rounded, and nicely filled out by a large selection of local and international wines.

With a four course meal including wine and desserts running to around 25 euros a head, you’ll find the food reasonably priced.

Located in an old house just a stones throw from Plaza del Cristo, the setting is nearly 200 years old, and has a huge patio at the rear with a large bar on the ground floor.

Whilst the traditional soups are excellent, sometimes you just don’t have the time, which is why we love this quick tomato and bean soup from Tuscany.

It will take even the most inexperienced of chefs only 15 minutes to prepare, freezes well and is absolutely delicious.

Ingredients (4-6 people)

1 tbsp olive oil
1 onion finely chopped
2 cloves garlic finely chopped (optional)
390g can of chopped tomatoes (triturado)
300ml vegetable stock
1tsp cornflour
300g small cooked white beans, sold here in jars
2 tbsp fresh basil, chopped
2 tbsp Parmesan finely grated
Basil leaves and a little oil to garnish
Black pepper

Method

Heat the oil in a large saucepan and cook the onions and garlic until tender and turning golden. Add the tomatoes and stock and bring to the boil. Blend the cornflour with 2 tbsp of cold water and add to the soup with the beans and chopped basil. Stir until the mixture comes to the boil, turn down and simmer for five minutes. Serve. Sprinkle with Parmesan cheese, a drizzle of olive oil, basil leaves decoration and black pepper to taste.

Plump up with pasta: Add 50 grams of small pasta shapes with another 300ml of stock and simmer for 10 minutes not five until the pasta is cooked through.

Beef it up: Buy six ready made meatballs from your local butcher or make your own, and break them into smaller portions. Make five or six mini meatballs from each bigger one and add to the soup just before the simmering stage. Make sure they are cooked through by slicing one in half before serving.

TIP: Few of us have the time these days to stand over the stove and watch each dish through every stage. Try this tip to save burnt offerings when you get distracted whilst something is on the boil. When you have a dish simmering, turn the pan lid upside down over the top of it and fill it with water. The liquid in the pan lid will be consumed before the liquid in the pan, thus saving drying out and burning.

Last week saw a massive announcement for Tenerife, as details of a brand new festival were released. Titled ‘The Rock Coast Festival 2012′, it is scheduled to be held on the 24th, 25th and 26th of May in the island’s capital, Santa Cruz de Tenerife.

It is anticipated that the event could bring over 35,000 people to the island, and whilst artists are yet to be announced, attractions are being discussed, with activites such as Rollerball, F1 simulators, and Skate parks all being arranged for the weekend of the event.

The Mayor of Santa Cruz, José Manuel Bermúdez, was quoted as saying that the event will be above the scale of anything ever seen before on Tenerife. The Director of LM Producciones, Leopoldo Mansito, said that whilst he doesn’t want to compare the event to other large scale events elsewhere in the world, they are anticipating an ‘amusement park’ feel, with a huge range of activities on offer to complement the music on show.

Ticket prices are currently listed as 60€ for the 24th, 50€ for the 25th, and 60€ for the 26th and a price of 120€ for all three days. Other tickets are available, and can be seen here.

For more information on the event itself, you can see the official website.
