Description: Abundance went from Rome to the Byzantine empire (Istanbul) around 330 AD, a city that during eleven centuries united Europe to Asia with hundreds of caravans with silk and spices. What city, if not, could have made its own capital the thousand and thousand flavours? In ancient Istanbul they no longer ate laying down, like the Romans, but sitting down and they invented the daily use of the fork. They are the creators of candied egg yolk threads and learned to cook to boiling point. Puff pastry was born in their kitchens and they were masters in the art of mincing and seasoning meat as well as covering in breadcrumbs. Yoghurt accompanied all of their meals, Cristina S offers us the opportunity to come closer to the Turkish Delights, amongst the great tastes are the aubergine with yoghurt and tomato, hummus and carrot with fried onions with walnuts, the 'Alinasi' or bread base with yoghurt covered with pieces of fried veal with onion, green and red peppers. Desserts are all home made and of their own inspiration such as the 'Baklava'.

Nicola Picciau was born in Milan in 1978, and from an early age he displayed a passion for cooking and working in kitchens, as was the family tradition, inherited from their ancestors. He first learnt his cooking skills from his Grandmother's farm in Sardinia, where he kept his large family happy with various Mediterranean recipes.
